From 2004 data, I found many successful bids in this area around X-mas for less than $50. Should I wait for 1 more week or 2 to bid, so that I can get a better price than what I can get now? Thanks.

You have plenty of time before your stay, you should reserve a cancellable backup at the Doubletree . FYI, it looks like the Hyatt is available for $110 at Hotwire, so $60 is probably not far off for a 3*.
