I am trying for the Sheraton Paris Airport Hotel or the Hilton Paris CDG Airport Hotel. Any tips to spotting these would be greatly appreciated.

Do the hotel offerings change frequently enough?

You can use the Hotwire Hotel List to see amenity sets that the Sheraton has used in the past, but there is no way to 'force' HOTWIRE to show you a specific property. The opaque suppliers (PRICELINE / HOTWIRE) work best when you are flexible in your plans and looking for a deal on *a* hotel... not when there is one specific hotel (of at least 7 of the same star rating in the zone) that you're looking to stay at. You may get luck and the hotel you want is the one offered, but it's not something you can necessarily expect, especially with so many hotels in the zone at this same star rating.

If you're looking for a hotel at a specific location (like near a train station??) you may want to search our sister site MAPS and HOTELS.com which will make it easy to see how much more/less it would cost to go up/down in star rating OR to stay closer/further from your exact ideal location.

I keep checking my dates in the hope that a new hotel will be offered up but so far it has remained the same hotel. Does HOTWIRE change the offerings for the same time period or does it pretty much remain what is there from week to week? I don't want to book the hotel available but I am getting close to my date of travel. Could a new hotel become available a week or two before I leave?

There is no way to know current inventory levels and whether or not inventory or change between now and your date/s of travel. The hotel you see now may not change between now and your stay, or it may change tomorrow. Additionally, there is the possibility that rates can go up and inventory may go away.
