I see that the city is pretty booked AND for quite a few hotels there is a 2 nights minimum stay...

I just booked a stay from 07/10 to 07/13.
First offer of 62$+ was accepted after a long time of "checking your offer price".
I was then given the opportunity to extend the stay at the same low nightly rate.
I took that 2nd offer and chose to arrive a day sooner.
