I am planning to visit the Statue of Liberty(#1 on kids' list) on Monday 8/4 after I check out the hotel in the morning, is there plenty of parkings at the Liberty State Park NJ? or I need to adjust my plan to go on Sunday?

Heading home early afternoon on 8/4.

There is plenty of (paid) parking at Liberty State Park and (assuming you check the ferry schedule) i would recommend Monday over Sunday as it should be at least a little less crowded.

Not sure of the age of your kids but there is also a nice new park right near your hotel with a carousel, beach area, and some good climbing/spinning equipment. If you leave your hotel and make a left, walk 4-5 blocks until you see Staples and/or Target... then cross the street toward the right and head to the water. There is also a walkway there that will take you all the way to Hoboken train station which is also neat if any of your kids are into trains.
